Cheddar Cheese

Cheddar cheese is Britains most popular cheese, with a nutty yet slightly sharp, full flavour and firm body. Cheddar is synonymous with the West Country where it was made in the fifteenth century - it was stored in the local Cheddar Gorge caves which were ideal for the maturation process. Nowadays, instead of caves, temperature-controlled, insulated stores are used.

The name comes from part of the cheesemaking process where the curds are turned by hand to allow whey to drain away. This action is called "cheddaring the curd".

Cheddar is graded at between 2 to 4 months of age and the best cheese is left to mature ready for eating - at normally not less than 9 months of age - and some may be left for 2 years.
